The present invention concerns Pyridinium-Betain compounds of the general formula (A) wherein R1 is taken from the group consisting of a rest of primary amino acids and H: X is taken from the group consisting of OH, including the ionised form O-, Y is taken from the group consisting of OH, SH, including the ionised forms O- and S-, Z is taken from the group consisting of H, alkyl groups, glycosidic groups, or phosphate and derivatives thereof, n is the chain length which can be from n=0 to n=4 and wherein the counter-ion is taken from the group consisting of sodium, potassium, ammonium, calcium, and the like.
