The present invention relates to quality-improving agents for Frozen SURIMI which is used as a raw material of fish pastes, and also relates to a process for preparing Frozen SURIMI which comprises using such a quality-improving agent. That is, the present invention relates to quality- improving agents for addition to Frozen SURIMI which comprises as an effective ingredient a mixture of sodium bicarbonate, calcium citrate and calcium lactate, and also relates to a process for preparing Frozen SURIMI which comprises using the above quality-improving agent for addition to Frozen SURIMI in a range of 0.01 to 3 weight % based on fish meat SURIMI.
