A mixture of quaternary ammonium esters exhibiting advantageous properties including stability, ease of formulation, and exemplary fabric softening properties, can be produced by hydrogenating a triglyceride such as canola oil having a high C18 content, the hydrogenation being carried out so as to hydrogenate diunsaturation and triunsaturation while minimizing conversion of monounsaturation to full saturation; and thereafter hydrolyzing the triglyceride, esterifying it with a dihydroxyethyl amine, and quaternizing the esterified product.
