The invention discloses a rapid method of measuring complex carbohydrates in mammalian tissue, said method comprising the steps of: extracting a sample of tissue to be tested; forming a homogenous slurry of the sample with an aqueous solution; adding sufficient hydrolysing enzyme for ensuring complete hydrolysis of glycogen in the slurry; and measuring the concentration of glucose in the slurry. The method can be conducted post-mortem to assay the concentration at the time of slaughter. The invention further discloses the measurement of lactate concentrations. The method of the invention can be conducted in thirty minutes or less.
L'invention concerne une méthode rapide destinée à mesurer la concentration de glucides complexes dans le tissu mammalien, comprenant les étapes de : prélèvement d'un échantillon de tissu à tester ; préparation d'une suspension homogène d'un échantillon dans une solution aqueuse; adjonction de suffisamment d'enzymes hydrolysées pour assurer une hydrolyse complète du glycogène dans la suspension; et une mesure de la concentration de glucose dans la suspension. La méthode peut être effectuée post-mortem pour une bioanalyse de la concentration au moment de l'abattage. L'invention concerne également la mesure de concentrations de lactate. La méthode de cette invention peut être appliquée en trente minutes ou moins.
