ABSTRACT OF THE DISCLOSURE A wine of reduced alcohol content and a high proof condensed vapor by product are produced by a system and method which includes feeding an original wine product from a source into a centrifugal film evaporator for elevating the temperature of the original wine product while being centrifuged to a temp- erature at which a predetermined part thereof is divided into a liquid phase and a vapor phase, the liquid phase being a reduced alcohol wine and the vapor phase being a vaporized by product of relatively high proof, the centrifugal film evaporator having means for removing the liquid phase by centrifugation and means for removing the vapor phase therefrom.
