ABSTRACT Triglycerides are esterified at the 1- and 3- positions with saturated, long chain fatty acids, such as stearic, and at the 2- position with a short chain acid, such as acetic. These triglycerides provide fewer calories than those triglycerides commonly present in foods. Food compositions which are lower in calories than the original compositions can thus be produced by replacing some or all of the fat with this type of triglyceride.
