REDUCED CHOLESTEROL BUTTER PROCESS ABSTRACT OF THE DISCLOSURE A reduced cholesterol butter is made by removing substantially all of the volatile flavor components and cholesterol from anhydrous milkfat. Substantially all of the flavor components removed are then added back to the anhydrous milkfat and the fat content of the anhydrous milkfat is then decreased to that of conventional butter.
