Disclosed are a method for the reduction of an oligosaccharide mixture and an oligosaccharide mixture prepared thereby. In accordance with the disclosed invention, a mixture of oligosaccharides having a given DP profile is reduced to a DE of essentially zero by catalytically hydrogenating the mixture under reaction conditions sufficient to preserve the DP profile of the mixture, which reaction conditions typically include a reaction temperature ranging from about 50 °C to about 150 °C and a reaction pressure ranging up to about 1500 psi. Surprisingly, when the mixture is a malto-oligosaccharide mixture, the reduced mixture will have a superior color-fastness and thermal stability as compared to a similar unreduced mixture of malto-oligosaccharides, and also low reactivity towards nitrogen-containing species.

La présente invention concerne un procédé de réduction d'un mélange d'oligosaccharides et un mélange d'oligosaccharides préparé par ce procédé. Selon cette invention, on réduit un mélange d'oligosaccharides ayant un profil de degré de dépolarisation (DP) donné en un équivalent-dextrose (DE) pratiquement nul par l'hydrogénation catalytique du mélange dans des conditions réactionnelles suffisantes pour préserver le profil DP du mélange, ces conditions réactionnelles présentant généralement une température de traitement comprise entre environ 50 DEG C et environ 150 DEG C, ainsi qu'une pression réactionnelle allant jusqu'à 1500 psi. Curieusement, lorsque le mélange est un mélange malto-oligosaccharide, le mélange réduit présente un grand teint et une stabilité thermique supérieurs en comparaison avec un mélange analogue non réduit de malto-oligosaccharides, ainsi qu'une faible réactivité face aux espèces contenant de l'azote.
