ABSTRACT Vegetable matter is processed for transportation by first being placed in an air-tight container, such as a trailer body, at a first location. The vegetable matter is flushed as soon as possible in the container with cold water at as low a temperature as the vegetable matter will tolerate. Simultaneously the air in the container is replaced with an oxygen-free atmosphere, such as nitrogen. As the container is transported to a second location the atmosphere in the container is maintained free of oxygen and the temperature in the container is maintained as low as the vegetable matter will tolerate. The vegetable matter will arrive at its destination in excellent condition, ready for sale or consumption.
