A rice pudding formulation which incorporates 2-16% dry weight parboiled medium grain rice which is processed by ultra-high temperature treatment of at least 230°F for a time effective to produce sporecidal activity and to produce a rice pudding product which has a relatively-low level of microbiological activity and which is suitable for refrigerated distribution. The parboiled, medium grain rice is more tolerant to the high temperature and shear conditions of UHT processing. The rice maintains a soft texture for greater than 60 days of refrigerated storage in the finished rice pudding product.
L'invention porte sur une formule de pouding au riz qui comprend deux types de riz à grain moyen mi-cuit à 16 % de teneur en matières sèches, lequel a été traité au moyen d'un procédé à ultra-haute température atteignant au moins 230 degrés Fahrenheit pour une durée propre à générer un effet sporicide tout en produisant un pouding au riz à niveau d'activité microbienne relativement faible convenant à la distribution réferigérée. Le riz à grain moyen mi-cuit tolère plus facilement la température élevée et les conditions de cisaillement associées au traitement à ultra-haute température. Ce riz sous forme de produit fini conserve une texture douce pendant plus de 60 jours de stockage réfrigéré.
