ABSTRACT OF THE DISCLOSURE A dextrose containing solution is treated with chelating resin capable of removing heavy metals and thereafter at least a part of the dextrose is isomerized to levulose in the presence of a dextrose isomerase enzyme preparation; the resin employed is a selectively adsorbing chelating or selectively adsorbing exchange resin; the resin includes a chelating or binding group capable of binding heavy metal ions, for example, zinc and lead ions.
