ABSTRACT OF THE DISCLOSURE The present invention provides a method of measuring the water content of flowable materials, which comprises deter- mining a physical quantity or property of the moist material in contact with a measuring probe and by converting this physical quantity into a measurable electrical signal, the measuring probe being submerged in the stationary or flowing material, the measuring probe being moved from a protected position and sub- merged in the material, rendered substantially uniform in a vessel, by relative movement between the probe and the material, the probe, after completion of the measurement, being withdrawn from the stream of material, cleaned or cooled or both, and returned to the protected position.
