La méthode de fabrication de vin de rhubarbe inclut le mélange de la rhubarbe, du sucre, de la levure. Après un délai de quelques jours de fermentation, la densité est vérifiée régulièrement jusqu'à l'arrêt complet de la fermentation. Le vin est alors soutiré et embouteillé en ajoutant du sucre dans la bouteille afin de produire une fermentation secondaire, rendant le vin pétillant dans les deux à trois mois.
