PROCESS FOR PRODUCING SACCHARIDE FATTY ACID POLYESTER FAAT SUBSTITUTE AND NOVEL PRODUCTS PRODUCED BY THE PROCESS Abstract of the Disclosure The method for producing saccharide polyesters comprising admixing lower acyl ester saccharide, a fatty acid lower alkyl ester, and an alkaline metal catalyst to form a reaction mixture. Thereafter, the reaction mixture is heated to a reaction temperature and maintained at that temperature for a predeter- mined period of time. A low vacuum is drawn over the mixture. Yields of 95% to 99% can be achieved in accordance with this method. Novel saccharide polyesters such as raffinose fatty acid polyester, stachyose fatty acid polyester, and trehalose fatty acid polyester can be produced in accordance with this present invention.
