A B S T R A C T This invention relates to novel saccharoascorbic acid derivatives and their production. The derivatives are represented by the general formula set forth below, for example, an amido, a thiolester or carboxylic ester of saccharoascorbic acid, and their salts. The compounds of the present invention are useful for food additives as antioxidants, an intermediate for the production of dichiral compounds and medicines having antithrombotic activity. Image wherein Z represents Image , -SR6 or -OR7, R4 and R5 independently represent hydrogen or a hydrocarbon group of 1 to 24 carbon atoms, or R4 and R5 may together form ?CH2?n in which n is an integer of 4 to 7, R6 represents a hydrocarbon group of 1 to 24 carbon atoms, R7 represents hydrogen or a hydrocarbon group of 1 to 24 carbon atoms, R1, R2 and R3 independently represent hydrogen, an acyl group of 1 to 18 caron atoms or a hydrocarbon group of 1 to 24 carbon atoms, and ~ represents the R-configration or the S-configration; provided that when Z is -OR7, R1 and R2 are not the same and R3 is hydrogen, or a salt thereof.
