Saccharose-based granule with a coating agent, characterized by the following: It consists of a saccharose-based grain having a friability of less than 5%, and ideally less than or equal to 3%, the said grain being covered with a coating agent. Its melting time is at least equal to 3 hours when 1 gram of the product is placed in 400 mL of deionized water at 22 degrees Celsius. The product of the invention may also contain an additive chosen in the food flavours, food colours and organic food acids group. It may also include a drug. The saccharose-based hydrophobic granule in this invention has many applications. It may be used in all sugar-using industries: confectionery, dairy products, pastries, biscuits, Viennese breads, ice creams and chocolate.
Granule à base de saccharose et d'un agent de pelliculage, caractérisé en ce qu'il est constitué d'un grain à base de saccharose ayant une friabilité inférieure à 5 %, de préférence inférieure ou égale à 3 %, enrobé de l'agent de pelliculage, et que son temps de fonte est au moins égal à 3 heures à raison de 1 gramme de produit dans 400 ml d'eau déionisée à 22°C. Le produit de l'invention peut contenir en outre un additif choisi dans le groupe composé des arômes alimentaires, des colorants alimentaires et des acides alimentaires organiques. Il peut également comprendre un médicament. Le granule hydrophobe à base de saccharose de la présente invention trouve de nombreuses applications. Il peut être utilisé notamment dans tous les métiers des utilisateurs du sucre, notamment dans le domaine de la confiserie, dans le domaine des produits laitiers, dans le domaine de la pâtisserie, de la biscuiterie, des viennoiseries, dans le domaine des glaces alimentaires ainsi que du chocolat.
