A novel chondroitin sulfate which can be produced more economically in a large amount and is expected as being useful for various purposes and processes for producing the same. Namely, a novel chondroitin sulfate which has an intermediate structure between the conventionally known whale-origin chondroitin sulfate and shark-origin chondroitin sulfate and is expected as useful for various purposes in the fields of drugs, cosmetics, food additives, etc. A process for producing the above-described chondroitin sulfate comprises grinding salmon nasal cartilage at a low temperature, defatting the ground matter, then treating it with an alkali and pronase, centrifuging the thus obtained liquid digested matter and then precipitating it from ethanol; and another process wherein the precipitate thus obtained is further treated with a cation exchange resin.
L'invention concerne un nouveau sulfate de chondroïtine pouvant être produit plus économiquement en une grande quantité et attendu comme étant utile à diverses fins et ses procédés de production. Plus précisément, l'invention a trait à un nouveau sulfate de chondroïtine présentant une structure intermédiaire entre le sulfate de chondroïtine de la baleine et le sulfate de chondroïtine tiré du requin connu classiquement, et attendu comme étant utile à diverses fins dans les domaines des médicaments, de la cosmétique, des additifs alimentaires, etc. Un procédé de production du sulfate de chondroïtine décrit ci-dessus consiste à broyer du cartilage nasal de saumon à basse température, à dégraisser la matière broyée, ensuite à la traiter avec un alcali et une pronase, à centrifuger la matière liquide digérée ainsi obtenue et ensuite à la précipiter à partir d'éthanol, et un autre procédé consiste à traiter à nouveau le précipité ainsi obtenu avec une résine d'échange de cations.
