This invention relates to an apparatus used in heating a media, such as salt, to a certain temperature, then, when ready, the heated media is used to bury a food item, such as chicken, for cooking. The apparatus comprises an internal chamber including a rotor having impellers for agitating and mixing the salt during heating to prevent burning and to evenly distribute the heat. Suitable alarms are also provided to alert the user or chef when the salt has reached the desired temperature, then the chicken is buried with the heated salt for cooking. The chicken can be buried in a separate receptacle, or, if the apparatus is large enough, within the internal chamber. In a second embodiment of the invention, the internal chamber itself is fixed to rotate in the apparatus so as to agitate and mix the salt to prevent burning during heating and to evenly distribute the heat. This invention also relates to an improved process for cooking foods "Hakka Style" without the time consuming step of using a chef to heat the salt to the desired temperatures.
