L'invention concerne des sels de nutriments stabilisés par des acides aminés et/ou du sel d'ammonium, et un produit et un complément alimentaire les contenant ainsi que des procédés d'obtention associés. Les sels de l'invention sont obtenus à l'aide d'anions d'acides organiques ou d'anions inorganiques et de cations métalliques associés aux acides aminés et/ou au sel d'ammonium. Les sels de l'invention sont représentés par la formule suivante : {[Ac]n- Men+ <- n [acide aminé et/ou sel d'ammonium]}- x H2O, dans laquelle <- représente une liaison covalente dative.
