The invention is a method of sanitizing and destaining ware, including silverware. In its most preferred mode the method comprises the steps of applying a sanitizing concentrate composition to siiverware at a rate of 100 ppm to 2000 ppm, the sanitizing concentrate composition including from about 1 wt-% to 20 wt-% of peroxycarboxylic acid, from about 10 wt-% to 50 wt-% of carboxylic acid comprising a mixture of acetic acid, and octanoic acid, said acetic acid and said octanoic acid present in a ratio ranging from about 10 to 1 to about 1 to 1, respectively, from about 3 wt-% to 35 wt-% of hydrogen peroxide, and a balance of carrier wherein said peroxycarboxylic acid comprises the reaction product of said acetic acid, octanoic acid, and hydrogen peroxide.
Procédé de désinfection et de nettoyage d'accessoires de cuisine, y compris d'argenterie. Dans le mode de réalisation préféré, ledit procédé consiste à appliquer une composition de nettoyage concentrée sur de l'argenterie à raison de 100 ppm à 2000 ppm, ladite composition concentrée de nettoyage comprenant environ 1 % à 20 % en poids d'acide peroxycarboxylique, environ 10 % à 50 % en poids d'acide carboxylique contenant un mélange d'acide acétique et d'acide octanoïque, lesdits acides acétique et octanoïque étant présents dans un rapport d'environ 10 à 1 à environ 1 à 1, respectivement, environ 3 % à 35 % en poids de peroxyde d'hydrogène, et le reste étant un véhicule, ledit acide peroxycarboxylique comprenant le produit de réaction d'acides acétique et octanoïque et du peroxyde d'hydrogène.
