A rapid screening procedure to select microorganism strains that produce a high proportion of alternan to dextran and a high proportion of alternansucrase to dextransucrase is described. Strains selected by the method are useful to produce a high proportion of alternansucrase to dextransucrase and to produce a high proportion of alternan to dextran, either fermentatively by cultivation of the strains on sucrose, or enzymatically by using alternansucrase produced by the strains of the invention. The selected strains can also be used to obtain microorganism strains having further improvements.
Procédé rapide de criblage en vue de la sélection de souches de micro-organismes produisant plus d'alternane que de dextrane, et plus d'alternanesucrase que de dextranesucrase. Les souches ainsi sélectionnées servent à produire plus d'alternanesucrase que de dextranesucrase et plus d'alternane que de dextrane, soit par fermentation en les cultivant sur de le saccharose, soit par une technique enzymatique recourant à des alternanesucrases produites par les souches objet de l'invention. Les souches sélectionnées peuvent également servir à produire d'autres souches de micro-organismes présentant d'autres améliorations.
