A semi-processed product for the preparation of deep-frozen desserts having creaminess and softness characteristics at temperatures below zero is disclosed, preferably in the range between -15~C and -25~C, comprising: monosaccharides in a percentage range between 60% and 80%; sweeteners in a percentage range between 5% and 15%; milk proteins in a percentage range between 5% and 10%; vegetable fibres in a percentage range between 0,5% and 5%. The percentage values are based on the total weight of the semi-processed product.

L'invention concerne un produit semi-transformé pour la préparation de desserts surgelés présentant des propriétés crémeuses et tendres à des températures inférieures à zéro, de préférence entre -15 ·C et -25 ·C, comprenant : des monosaccharides dans une gamme comprise entre 60 % et 80 %; des édulcorants dans une gamme comprise entre 5 % et 15 %; des protéines laitières dans une gamme comprise entre 5 % et 10 %; des fibres végétales dans une gamme comprise entre 0,5 % et 5 %. Ces valeurs exprimées en pourcentage sont fonctions du poids total du produit semi-transformé.
