ABSTRACT In a process and apparatus for the continuous separation of liquids from solid or colloidal materials, particularly of milk from cheese, by compression, the cheese in the form Of a heaped layer is subjected to pressure loading by opposing surfaces during forward motion, the improvement being that during its forward motion the heaped layer of cheese is transformed into a slab of cheese standing on edge, compression being exerted on both lateral surfaces of the slab, and after the compressive treatment the slab is again transformed into a freely spread out layer.
