The present invention provides shelf-stable, acid-pasteurised rice which, on reheating, does not have any acid flavour notes but has premium quality. This is achieved by use of a polymeric food acceptable acid, such as alginic acid, as the acidulant. There is also disclosed a process for producing such rice.

La présente invention porte sur un riz pouvant être conservé longtemps et pasteurisé par un acide qui, lors du réchauffage, ne prend aucun goût acide et reste de première qualité. Cela est réalisé grâce à un acide polymérique de qualité alimentaire, comme l'acide alginique, jouant le rôle d'acidulant. L'invention porte également sur une méthode pour produire ce type de riz.
