SIMULATED MILK COMPRISING SUNFLOWER SEED CONSTITUENTS ABSTRACT OF THE DISCLOSURE Heretofore, in the processing of sunflower seeds, only the sunflower oil has been used as food and the other constituents, containing proteins and glucides are used as feed. With the world-wide shortages of food, it would be most advantageous if these other constituents of sunflower seeds could also be used as food. The compositions of the present invention, containing these other constituents of sunflower seed provide novel milk compositions which are superior in taste and nutriments. The novel vegetable seed milk compositions of the invention comprise sunflower seed constituents and water which contain at least proteins and lipids from sunflower seeds but substantially no solid constituents from the hull of the sunflower seeds. The compositions have a PH of not more than 8.0 and the sunflower seed constituents are present in aqueous medium in the form of emulsion, suspension and solution.
