A process and apparatus is disclosed for removing the skin from products such as nut kernels, beans, seeds or the like. The process comprises subjecting the products to a jet or jets of water at ambient temperature so as to remove their skins. The apparatus includes cages (4) arranged to receive the products and a liquid jet manifold (8) adapted to direct the jet or jets at the products.
