The invention relates to an arrangement in a sticking knife (2) for withdrawing blood from slaughter animals. The sticking knife has a hollow handle (3) whose one end is connectable to a hose and whose other end has a blade (5). The arrangement (1) comprises a knife retaining means (9a, 9b) for engaging the body of the animal, when the sticking knife has been stuck into the animal, and an operating means (15-27) connected to the knife retaining means to move it between a sticking position and an engaging position. The knife retaining means comprises at least one arm (9a, 96) which is pivotably mounted adjacent the handle (3) and is formed with a hook-shaped end for said engagement with the body of tits animal, the arm extending, in the sticking position, substantially in parallel with the geometric axis of the sticking knife.
La présente invention décrit un système de couteau (2) utilisé pour saigner les animaux de boucherie. Ce couteau comporte un manche creux (3) dont une extrémité peut être reliée à un tuyau et dont l'autre est munie d'une lame (5). Le dispositif (1) comprend un système de blocage du couteau (9a, b) pour entraîner le corps de l'animal une fois le couteau planté, et un système de commande (15-27) relié au système de blocage pour lui permettre de se déplacer entre la position dans laquelle on enfonce le couteau et celle dans laquelle l'animal est entraîné. Le système de blocage comprend au moins un bras (9a, b) pivotant adjacent au manche (3). Grâce à son extrémité en crochet, il peut agripper le corps de l'animal, le bras en avant, prêt à enfoncer le couteau, quasiment en parallèle à l'axe géométrique de celui-ci.
