The present invention is based on knowledge that basically, solid milk provided with both of adequate strength and solubility can be obtained by using only powdered milk as ingredient to be provided with compression molding under state where the porosity and the free fat is controlled within predetermined ranges, and then humidified and dried. Namely, solid milk having porosity of 30%-60%, and method of making solid milk including: a compression step for compressing powdered milk to obtain a solid form of compressed powdered milk; a humidifying step for humidifying the compressed powdered milk obtained by the compression step; and a drying step for drying the compressed powdered milk humidified by the humidifying step achieves the object of providing solid milk having preferred solubility and strength, and method of making the same.

La présente invention se base sur la connaissance que, essentiellement, du lait solide d~une concentration et d~une solubilité adéquates peut être obtenu en utilisant seulement du lait en poudre comme ingrédient à fournir avec un moulage par compression dans un état où la porosité et les matières graisses libérées sont contrôlées selon des plages prédéterminées, suite à quoi la substance est humidifiée et séchée. Il s~agit spécifiquement de lait solide d~une porosité de 30%-60% et d~un procédé de fabrication de lait solide comprenant : une étape de compression du lait en poudre permettant d~obtenir une forme solide de lait en poudre comprimé, une étape d~humidification du lait en poudre comprimé obtenu lors de l~étape de compression, puis d~une étape de séchage du lait en poudre comprimé humidifié par l~étape précédente d~humidification, cela afin de parvenir à fournir du lait solide d~une solubilité et d~une concentration choisies, ainsi que son procédé de fabrication.
