Coloring flakes which include a food grade, water soluble polymer component and coloring agents are provided. Also provided are methods for applying the coloring flakes to confection pieces and speckled confection pieces formed with the coloring flakes. The food grade, water soluble polymer may include a food grace, water soluble natural gum. In some embodiments the food grade, water soluble polymer makes up at least 80 weight percent of the coloring flakes. In certain embodiments, the coloring flakes have a site distribution characterized in that at least 90 weight percent of the coloring flakes are retained by a 20 mesh sieve.
