A split sausage of the present invention comprises a sausage link having an interior and an outer surface surrounding the interior, wherein the sausage link is sliced longitudinally. A process for producing split sausage links comprises receiving a plurality of sausage links and automatically slicing the sausage links longitudinally. The sausage links are sliced to a depth that is greater than about 50 % of its cross-section.
