Abstract of the Disclosure A dried coffee whitener comprising functional amounts of a hydrogenated vegetable oil, a casein-containing protein, a buffering agent, an emulsifying agent, the remainder being essen- tially carbohydrate, the improvement comprising employing as said emulsifying agent an ionic emulsifier such as sodium stearoyl-2- lactylate in combination with at least about .7% partial glycerol ester emulsifier. The whitener is particularly suitable for addition to an acidic, hot environment as found in hot coffee, the amount of protein in the form of sodium caseinate being consider- ably reduced with respect to conventional coffee whiteners.
