A spreadable butter product, with a method of production, wherein vegetable oil is combined with already churned butter. The vegetable oil, which is preferably canola oil, contains low levels of a phospholipid such lecithin so as to reduce the surface tension of the system, and thereby reduce or eliminate the absorption of the vegetable oil into the crystal structure of the butterfat in the butter. The spreadable butter has improved system stability which allows it to remain spreadable for longer periods of time.

Produit tartinable à base de beurre et sa méthode de fabrication, dans laquelle une huile végétale et combinée avec du beurre déjà baratté. L'huile végétale, de préférence de l'huile de canola, contient une faible teneur en phospholipides tels que la lécithine, de qui réduit la tension superficielle du système et diminue ou élimine en conséquence l'absorption de l'huile végétale dans la structure cristalline de la matière grasse butyrique dans le beurre. Le beurre tartinable possède un système de stabilité amélioré, ce qui lui permet de demeurer tartinable pendant une période plus longue.
