Polyunsaturates, that is to say triply or higher ethylenically unsaturated organic materials, especially essential fatty acids, are stabilised by the addition of at least one essential oil. The essential oil is preferably chosen from thyme oil, oregano oil, pepper oil and clove oil.

On stabilise des matières polyinsaturées, c'est-à-dire des matières organiques non saturées par l'éthylène par trois ou plusieurs liaisons, notamment des acides gras essentiels, en leur ajoutant au moins une huile essentielle. Cette dernière est de préférence de l'essence de thym, d'origan, de poivre ou de clou de girofle.
