The invention pertains to the field of probiotic compositions useful for human and/or animal food and health. The invention particularly relates to compositions containing stable probiotic microorganisms during the production of tablets or granules for final use. The works of the applicant of the present invention show that the mortality of probiotic microorganisms during granulation is closely linked with granulation operating conditions and with the characteristics of the selected microorganisms. Said works have led to the establishment of a mathematical expression for defining both the characteristics of the yeast as well as the parameters of the method so that the microorganism losses after granulation are lower than 1 log CFU/g of granulated food.

La présente invention se rapporte au domaine des compositions probiotiques utiles pour l'alimentation et la santé humaine et/ou animale. Elle se rapporte particulièrement aux compositions comprenant des microorganismes probiotiques stables notamment lors de la préparation des comprimés ou des granulés destinés à l'application finale. Les travaux de la demanderesse à la base de la présente invention montrent que la mortalité des micro- organismes probiotiques au cours de la granulation est étroitement liée aux conditions opératoires de granulation et aux caractéristiques des micro-organismes choisis. Ces travaux ont conduit à l'établissement d'une expression mathématique permettant de fixer ensemble les caractéristiques de la levure probiotique ainsi que les paramètres du procédé de manière à ce que les pertes en micro- organismes après granulation soient inférieures à 1 log CFU/g d'aliments granulés.
