The inventive method for stereoselectively preparing a (R) or (S) gamma-lactone consists in microbially biosynthesising gamma-lactone, wherein said biosynthesis is carried out from a substrate selected from C5 to C20 fatty acids with the aid of a strain selected from those enabling a steroslelective hydroxylation in C4 of said substrate, in particular Aspergollus sp or Mortierella sp. The biosynthesis of said gamma-lactone and the use thereof in perfumery and for food flavouring agents are also disclosed.

Procédé de préparation stéréosélective de gamma-lactone (R) ou (S), caractérisé en ce que l'on effectue une biosynthèse par voie microbienne de gamma-lactone, ladite biosynthèse étant réalisée à partir d'au moins un substrat, choisi parmi les acides gras de C5 à C20 à l'aide d'une souche choisie parmi celles permettant une hydroxylation stéréosélective en C4 dudit substrat, notamment Aspergillus sp ou Mortierella sp. Biosynthèse de ladite gamma-lactone, et utilisation en parfumerie et en aromatique alimentaire.
