In domestic canning, vacuum created by preheating keeps the cover with a rubber seal till the first opening. The new preservation method is accom- plished by an air tight seal between the pot and its cover. This article can be made of earthen or plastic material. The purpose of the article is to prevent oxygen from coming in contact with mold thus killing the microplants.
