Substance for reduction of absorption of lipids and for reduction of serum cholesterol content in mammals comprises microcrystalline chitosan. The microcrystalline chitosan can be administered orally in food products or in dose units containing a predetermined amount of microcrystalline chitosan. The microcrystalline chitosan has an average particle size not higher than 100 µm.
