The invention relates to a sunflower oil with high heat stability, which is characterised in that between 15% and 45% of the fatty acid total are saturated fatty acids (palmitic acid and stearic acid), between 45% and 75% of the fatty acid total is oleic acid and more than 85% of the tocopherol total corresponds to the sum of gamma- tocopherol and delta-tocopherol. The invention also relates to sunflower seeds that contain an oil with the aforementioned characteristics and sunflower plants which as a result of self-pollination produce seeds with the aforementioned characteristics. In addition, the invention relates to the use of said oil in food and animal feed and for the formulation of biolubricants and biofuels.
La présente invention concerne une huile de tournesol à thermostabilité élevée, qui se caractérise en ce que les acides gras saturés (acide palmitique et acide stéarique) représentent entre 15% et 45% du total des acides gras, l'acide oléique représente entre 45% et 75% du total des acides gras et, la somme du gamma-tocophérol et du delta-tocophérol correspond à plus de 85% du total des tocophérols. L'invention concerne aussi les graines de tournesol qui contiennent une huile possédant les caractéristiques mentionnées et les plants de tournesol qui, lorsqu'ils sont autofécondés, produisent des graines possédant les caractéristiques mentionnées. L'invention concerne enfin l'utilisation de cette huile dans l'alimentation humaine et animale et dans la préparation de biolubrifiants et de biocombustibles.
