The invention relates to suspensions or dispersions of gelled and hydrated biopolymer particles as well as to a process for obtaining such suspensions, either from dried gelling biopolymers or from dissolved gelling biopolymers. Such suspensions may be used in food products (such as edible spreads and ice-creams) or personal care products (such as skin creams and moisturizers), e.g. to impart a fatty-like character to the product.

L'invention se rapporte à des suspensions ou à des dispersions de particules biopolymères gélifiées et hydratées, ainsi qu'à un procédé permettant d'obtenir de telles suspensions, soit à partir de biopolymères à gélification déshydratés, soit à partir de biopolymères à gélification dissous. De telles suspensions peuvent être utilisées dans des produits alimentaires (tels que des pâtes à tartiner comestibles et des crèmes glacées), ou dans des produits de soins (tels que des crèmes de soin pour la peau et des crèmes hydratantes), notamment pour conférer des caractéristiques analogues à celles d'une matière grasse au produit.
