Dipeptide sweeteners are disclosed that are sweetener salts of N-[N-(3,3- dimethylbutyl)-L-.alpha.-aspartyl]-L-phenylalanine 1-methyl ester represented by formula (I), wherein Xm- is a conjugate base derived by deprotonation of an acidic sweetener, preferably saccharin, acesulfame, cyclamic acid and glycyrrhizic acid; and m=n. Also disclosed is a liquid low-calorie sweetener containing such basic salts.

L'invention concerne des édulcorants de type dipeptide qui sont des sels édulcorants de N-[N-(3,3-diméthylbutyl)-L-.alpha.-aspartyl]-L-phénylalanine 1-méthyl ester représentés par la formule jointe. Dans ladite formule (I), X?m-¿ est une base conjuguée obtenue par déprotonation d'un édulcorant acide, que l'on choisit de préférence parmi la saccharine, l'acésulfame, l'acide cyclamique et l'acide glycyrrhizique; en outre, m=n. L'invention concerne également un édulcorant liquide basses calories renfermant les sels basiques en question.
