ABSTRACT OF THE DISCLOSURE Sweetmeat in the form of soft inert gas-foamed substances on the basis of an oil-in-water emulsion containing milk ingredients, fat component(s), sugar, starch products and water is produced by the following production steps: (a) preheating of Quarg or Yoghurt or a blend of both at temperatures from 40 to 50°C; (b) admixture under stirring of whole or condensed milk in order to obtain blend A; (c) homogeneous premixing of sugar and starch products in order to obtain the dry premix B; (d) preparation of a pasty substance C from fat component(s) at temperatures from 50 to 75°C; (e) mixing of blend A with the dry premix B; thereafter (f) admixture of the pasty fat substance C under stirring at temperatures from 50 to 60°C; (g) subsequent addition of aromatic substances and acid enhancer until a pH-value of 4.2 to 5.0 is reached, to be followed by a stirring process of 20 to 25 minutes for full homogeneity at temperatures of 50 to 60°C; (h) pasteurizing of the mixture at temperatures from 95 to 110°C for a period not exceeding 20 seconds; and (i) cooling down the mixture to 40 to 60°C; (j) foaming up the mixture by means of injecting inert gas while, at the same time, attaining and maintaining the creamy character of the substance; (k) crystallizing of at leastpart of the fat component/components and the sugar under stirring and cooling down the creamy substance to not more than 20°C.
