ABSTRACT OF THE DISCLOSURE A switching and control device, particularly for baking ovens, which comprises a stepping switch with a rotatable con- troller barrel and a regulator or control coupled thereto, the clutch between the controller barrel and the regulating shaft of the regulator being constructed in such a way that the con- troller barrel drives the regulating shaft over a predetermined setting angle range and following on the setting angle range of the temperature regulator can be rotated further with respect to the regulating shaft, characterized in that the clutch is a slip or stop clutch, whose regulator-side coupling member is prevented from turning back with respect to regulator and/or switch.
