A method for preparing cooked pasta which includes mixing a flour with propyleneglycol alginate and water, extruding the mixture to obtain a pasta shape, cooking, acidifying, packaging and pasteurizing the shaped product without any drying step. The packaged product is ready to serve for consumption.

Méthode pour préparer des pâtes cuites, consistant à : mélanger une farine avec de l'alginate de propylèneglycol et de l'eau; extruder le mélange en forme de pâte; cuire, acidifier, conditionner et pasteuriser ce mélange en forme de pâte, sans aucune étape de séchage.
