A method for preparing cooked pasta which includes mixing a flour with propyleneglycol alginate and water, extruding the mixture to obtain a pasta shape, cooking, acidifying, packaging and pasteurizing the shaped product without any drying step. The packaged product is ready to serve for consumption.
