The present invention is directed to a process of preparing thermally inhibited starches using oligosaccharides to improve the rate of inhibition. The resulting starch/oligosaccharide blends have improved cold storage stability and may be used in a variety of products, particularly food products.

L'invention concerne un procédé de préparation d'amidons inhibés thermiquement qui met en oeuvre des oligosaccharides pour améliorer le taux d'inhibition.
