Thermophilic microorganism Bacillus coagulans strain SIM-7 DSM 14043 for the production of L(+)-lactate from fermentable sugars, including dextrines and starch. The temperature of cultivation is 53-65 ~C being the optimal. The final concentration of L(+)-lactate in fermentation is 12 % with the yield of 95 %. The cultivation of this strain of microorganism is possible without the high-temperature sterilization of equipment and media. Using cereal flour as the source of fermentable sugars, the need of the strain of the microorganism for mineral and nitrogen salts will be covered by the compounds present in the cereals.
Souche de micro-organisme thermophile Bacillus coagulans SIM-7 DSM 14043 destinée à la production de L(+)-lactate à partir de sucres fermentables, y compris les dextrines et l'amidon. La température de culture entre 53 et 65 ·C est la température optimale. La concentration finale de L(+)-lactate au stade de fermentation est de 12 %, avec un rendement de 95 %. La culture de cette souche de micro-organisme est possible sans stérilisation à haute température de l'équipement et des supports. L'invention concerne aussi l'utilisation d'une farine végétale en tant que source de sucres fermentables, les besoins de la souche de micro-organisme en sels minéraux et azotés étant couverts par les composés présents dans les céréales.
