Disclosed is a polypeptide having xyloglucan endo-transglycosylase (XET) activity, comprising substantially residues 21-289 of the amino acid sequence shown in Figure 1 (Seq ID No. 2) or functional equivalents thereof, together with nucleotide sequences encoding the same and various uses thereof.
