A B S T R A C T In a meat pickling machine different types of tools may be fixed at choice to take up means arranged in at least one row on the machine. Each type of tool has a mounting head which can be connected in a plus and socket-like manner to the take up means . The mounting head carries needles and/or knives All mounting heads have identically shaped pins and have openings for the pickling brine only for the needles but not for the knives . Thereby the pickling machine can be easily changed to a tenderizer
