A method and apparatus for instantly tenderizing meat employs a shock wave produced by an underwater electrical discharge through an electrode gap from a capacitor bank. To optimize the shock wave shape for tenderizing, the electrical pulse may be shaped by using timing the discharge of the capacitor bank.

Dans un procédé et un appareil permettant d'attendrir instantanément de la viande on utilise une onde de choc produite par une décharge électrique située sous l'eau à travers un écartement des électrodes d'une batterie de condensateurs. Pour optimiser la forme de l'onde choc utilisée pour l'attendrissage, l'impulsion électrique peut être façonnée au moyen de la temporisation de la décharge provenant de la batterie de condensateurs.
