Oxygen scavenging materials particularly for use in the food industry, are disclosed. The oxygen scavenging materials comprise at least one compound oxidizable by molecular oxygen, wherein the at least one compound is contained within an oxygen impermeable compartments(s) or microcapsules(s) which may, as required, be broken or otherwise rendered oxygen permeable by application of heat, electromagnetic radiation, mechanical pressure or stress, or by hydration.

L'invention porte sur des matériaux désoxygénants, notamment ceux utilisés dans l'industrie alimentaire. Les matériaux désoxygénants sont constitués d'au moins un composé oxydable par l'oxygène moléculaire, dans lesquels au moins un composé est contenu dans une ou plusieurs cavités imperméables à l'oxygène ou microcapsules que l'on peut, si besoin est, rompre ou rendre perméable à l'oxygène en les soumettant à de la chaleur, des rayonnements électromagnétiques, une pression ou contrainte mécanique, ou en les hydratant.
