A truss (10) is applied above the hocks (12) of a chicken (14) as a single or double loop with a knot (16). The hocks (12) are crossed and the legs (20) are held against the breast of the chicken (14) with the hocks (12) in proximal but spaced relation to the tail (18) of the chicken (14). The truss is made of an edible material such as slit tubular collagen (sausage) casing.

On applique une ficelle (10) au-dessus des jarrets (10) d'un poulet (14) sous forme d'une boucle simple ou double avec un noeud (16). Les jarrets (12) sont croisés et les cuisses (20) sont maintenues contre le corps du poulet (14), les jarrets (12) entretenant une relation proximale mais espacée avec le croupion (18) du poulet. La ficelle est constituée d'un matériau comestible tel qu'un boyau (à saucisses) de collagène tubulaire fendu.
